- potatoes, peeled, diced and boiled
- mustard seeds
- onions, sliced
- curry leaves
- optional: green peas
- turmeric powder
- coriander, chopped
- Heat the oil on medium heat, then add the mustard seeds. When they crackle, add the onions and for a few minutes.
- Mix in the potatoes and curry leaves. Add peas, water, salt, turmeric, and lime juice for 1–2 minutes, then stir and cook to thicken.
- Add the coriander and turn off the heat.
