- 1 large cauliflower (around 1.25 lb)
- 2 tsp cumin seeds
- 1.25 tsp salt
- 1 tsp chili powder
- 0.5 tsp turmeric powder
- 5 tbsp oil
- 1 lemon
- Pre-heat the oven to 350°F (or 180ºC). Line two trays with foil and bring water to boil.
- Wash the cauliflower, discard the leaves, break into small even florets and blanch for 1 minute in the boiling water. Drain well and let dry for 5 minutes in its own steam.
- Bash the spices with oil and coat the cauliflower well on your trays. Bake for about 30 minutes shaking every 10 minutes or so to roast evenly. Squeeze lemon before serving.
